Multi-Layer Rice Cake

Steamed Kuih Lapis or 9-layer cake

Ingredients
  

  • cup water
  • ½ cup coconut milk
  • 1 cup rice flour
  • ¼ cup corn starch
  • ¼ cup flour
  • ½ cup sugar
  • ¼ tsp salt
  • ½ tsp vanilla
  • 1 tbsp condensed milk

Instructions
 

  • In a mixing bowl, add water and coconut milk and mix well.
  • Add each of the flour one by one and mix well until no lumps can be seen and texture is smooth.
  • Add sugar, salt and vanilla and mix well.
  • Oil a baking dish in the steamer and start to boil the water.
  • Divide the mixture into ½ cup portions according to the number of layers that can fit into the dish.
  • Add different coloring into each cup portion. Use natural coloring whenever possible. Add condensed milk to the white portion.
  • When the water in the steamer is boiling, add the first potion into the baking dish. Steam for 5 minutes.
  • After that add the next portion and steam for another 5 minutes. Repeat until the last portion. Steam the last portion for 20 minutes.
  • Let it cool to room temperature before slicing and serving. You can serve with evaporated or condensed milk.
