Marinate chicken thighs with Italian seasoning, black pepper, garlic powder and salt for 30 minutes or more
With oil in wok, fry chicken for about 5 minutes per side, turning every 2-3 minutes.
Pre-heat oven to 375 degrees F
In a bowl, mix honey mustard dressing and mayo
In another bowl, mix grated parmesan cheese and breadcrumbs
Dip the fried chicken pieces into the dressing mixture and then into the breadcrumb mixture.
Lay the chicken pieces, skin side up, back into the wok. Spread any remaining dressing and crumbs on top of the chicken. Sprinkle some grated parmesan cheese over the chicken.
Bake chicken in oven at 375 deg F for 30 minutes until internal temperature > 165 deg F
