Season pork chops on both sides with salt and black pepper
In a bowl, mix the seasoning: oil, sesame oil, paprika, brown sugar, minced garlic, onion powder, Italian seasoning
In a baking dish lined with aluminum foil, lay the sliced sweet potatoes in a single layer. Sprinkle each piece with oil. Place a piece of pork chop on top of each potato.
Rub the seasoning over the pork chops on both sides. Sprinkle parmesan cheese on top of each pork chop.
Bake in a pre-heated over at 400 degrees F for 15 minutes
Flip the pork chops over and rub with remaining seasoning. Sprinkle with parmesan cheese. Rotate the baking dish so that the outside chops are now inside. Bake for another 15 minutes.
Pork chops are done when internal temperature is >=165 deg F.
