Immerse pork in water in a pot and bring to boil.
Drain the hot water and rinse the pork with cold water. Drain and set aside,
With some oil in the pressure cooker or separate wok, fry the pork for 2-5 minutes.
Add chicken broth, dark soy sauce, light soy sauce, wine, ginger, cinnamon and star anise into pressure cooker. Add fried pork if not already in. Mix well and bring to a boil.
Add water chestnut or Chinese mushrooms
Cover the pressure cooker and pressure cook the pork for 30 minutes.
Release pressure from the pressure cooker and scoop up pork into serving dish.
Add corn starch slurry into the liquid in the pressure cooker. Bring it to boil and stir until thickened.
Pour liquid on top of pork in serving dish.
