In a small bowl, mix the spices: celery salt, black pepper, thyme, paprika, garlic powder, onion powder.
In bowl #1, beat an egg and add milk. Add another egg if necessary if this runs out.
In bowl #2, Start with ¼ cup each of breadcrumbs and cornmeal and 1 tbsp of the spice mix. Replenish when this runs out.
Pre-heat oven to 425 degrees F
Pay dry the fish fillet and dip each one in bowl #1 and then bowl #2 ensuring that it is completely covered. Place fillet on a baking tray. Repeat until all the fillets have been coated.
Bake fish in oven at 425 degrees F for 20 minutes or until the internal temperature of the fish is >165 degrees F.
