Spicy Korean Chicken Stew

Ingredients
  

  • 8 chicken drumsticks
  • 1 onion sliced
  • 1 carrot sliced
  • 1 sweet potato sliced
  • 2 tbsp sesame oil
  • 1 tbsp minced garlic
  • 1 tbsp sugar
  • 1 tsp salt
  • 4 tbsp soy sauce
  • 2 tbsp honey
  • 2 tbsp Gochujang sauce

Instructions
 

  • In a small pot, mix sauce with sesame oil, minced garlic, sugar, salt, soy sauce, honey, Gochujang sauce. Stir well over low heat until well combined.
  • In a hot wok, fry drumsticks to sear them about 3 minutes per side. Put seared drumsticks aside and use wok for the next step.
  • Fry onions in wok for about 2 minutes. Ad sauce, mix and simmer for 1 minute.
  • Add the drumsticks, mix and cover them with the sauce. Add 2-3 cups of water to cover the drumsticks. Cover pot and boil over medium heat for 10 minutes.
  • Add carrots and potatoes. Cover and boil for another 10 minutes.
  • Switch to low heat and simmer for another 15 minutes
