Thaw puff pastry for 4 hours in fridge or about 40 minutes at room temperature. If you exceed this time, the pastry will become sticky and hard to work with.
Stir fry onions and garlic in oil for 2 minutes.
Add curry seasoning, tomato sauce, salt, and black pepper. Stir fry for about 3 minutes.
Add minced beef and then potatoes. Stir fry for 3-5 minutes until meat is cooked and potato softened.
Add coconut milk and mix well. Then let cool.
Cut each sheet of puff pastry into 4 squares.
Load each square with 1 tablespoon of filling.
Fold the square over diagonally to create a triangle to seal the filling in the dough.
Use the back of a fork to press lines into the open edges of each turnover to seal.
Lightly cut 3 slots on top of the pastry with a knife
Glaze top of pastry with egg wash and sprinkle with sesame seeds.
Air fry turnovers at 375 deg F for 8 minutes. [If you use an oven, bake at 375 deg F for 25 minutes]
