Air Fryer Curry Puffs

Ingredients
  

  • 1 pk Puff pastry 2 9x9in sheets
  • 1 lb Minced beef or chicken
  • 1 large potato diced
  • 2-3 tbsp curry seasoning
  • 1 cup coconut milk or cream
  • ΒΌ cup tomato sauce
  • 1 onion diced
  • 1 tbsp Minced garlic
  • 1 Egg for egg wash
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp sesame seeds

Instructions
 

  • Thaw puff pastry for 4 hours in fridge or about 40 minutes at room temperature. If you exceed this time, the pastry will become sticky and hard to work with.
  • Stir fry onions and garlic in oil for 2 minutes.
  • Add curry seasoning, tomato sauce, salt, and black pepper. Stir fry for about 3 minutes.
  • Add minced beef and then potatoes. Stir fry for 3-5 minutes until meat is cooked and potato softened.
  • Add coconut milk and mix well. Then let cool.
  • Cut each sheet of puff pastry into 4 squares.
  • Load each square with 1 tablespoon of filling.
  • Fold the square over diagonally to create a triangle to seal the filling in the dough.
  • Use the back of a fork to press lines into the open edges of each turnover to seal.
  • Lightly cut 3 slots on top of the pastry with a knife
  • Glaze top of pastry with egg wash and sprinkle with sesame seeds.
  • Air fry turnovers at 375 deg F for 8 minutes. [If you use an oven, bake at 375 deg F for 25 minutes]
