Multi-Layer Rice Cake
Steamed Kuih Lapis or 9-layer cake
Ingredients
- 1½ cup water
- ½ cup coconut milk
- 1 cup rice flour
- ¼ cup corn starch
- ¼ cup flour
- ½ cup sugar
- ¼ tsp salt
- ½ tsp vanilla
- 1 tbsp condensed milk
Instructions
- In a mixing bowl, add water and coconut milk and mix well.
- Add each of the flour one by one and mix well until no lumps can be seen and texture is smooth.
- Add sugar, salt and vanilla and mix well.
- Oil a baking dish in the steamer and start to boil the water.
- Divide the mixture into ½ cup portions according to the number of layers that can fit into the dish.
- Add different coloring into each cup portion. Use natural coloring whenever possible. Add condensed milk to the white portion.
- When the water in the steamer is boiling, add the first potion into the baking dish. Steam for 5 minutes.
- After that add the next portion and steam for another 5 minutes. Repeat until the last portion. Steam the last portion for 20 minutes.
- Let it cool to room temperature before slicing and serving. You can serve with evaporated or condensed milk.
