Pre-heat oven to 350 degrees F
Spread out coconut on baking tray and bake in oven for 8-10 minutes until brown
In mixing bowl, mix flour, baking powder and salt
In another bowl, use a hand mixer to mix butter, cream cheese, sugar, and eggs until creamy.
Add 1/3 flour mixture and mix.
Add 1/3 sour cream and mix.
Repeat steps 5-6 until all the flour mixture and sour cream have been added.
Add drained pineapple into the bowl and fold it to mix completely.
Add ½ coconut flakes into the bowl and fold to mix completely.
Put mixture into baking pan. Sprinkle the rest of the coconut on top of the mixture.
Bake in oven at 350 degrees F for 1 hour
