Coconut Pineapple Cake

Ingredients
  

  • 1 cup coconut flakes
  • 1 ½ cup flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ cup butter softened
  • 1 cup sugar
  • 3 eggs
  • 1 cup sour cream
  • 1 can crushed pineapple
  • 4 oz cream cheese

Instructions
 

  • Pre-heat oven to 350 degrees F
  • Spread out coconut on baking tray and bake in oven for 8-10 minutes until brown
  • In mixing bowl, mix flour, baking powder and salt
  • In another bowl, use a hand mixer to mix butter, cream cheese, sugar, and eggs until creamy.
  • Add 1/3 flour mixture and mix.
  • Add 1/3 sour cream and mix.
  • Repeat steps 5-6 until all the flour mixture and sour cream have been added.
  • Add drained pineapple into the bowl and fold it to mix completely.
  • Add ½ coconut flakes into the bowl and fold to mix completely.
  • Put mixture into baking pan. Sprinkle the rest of the coconut on top of the mixture.
  • Bake in oven at 350 degrees F for 1 hour
