Slice each chicken breast to stuff 1 tbsp of mozzarella cheese into it.
Drip each piece into flour, then egg, then breadcrumbs, covering completely.
Fry with oil in pan for about 5 minutes, 2 minutes+ per side, until golden brown. Set aside.
Cut zucchini into cubes and boil for 5 minutes in water.
Dish out zucchini (drained) and put into a pan and use a potato masher to mash it.
Turn on the heat and add butter. Stir until melted. Then add heavy cream, salt and ½ cup cheese. Mix and simmer for 3 minutes.
In a baking dish, spread the mashed potatoes on the bottom. Apply some of the zucchini alfredo on top of it.
Lay the chicken in the dish and spread the alfredo sauce on top of them.
Put the small potatoes in between the chicken pieces.
Sprinkle the basil on top of the chicken. Put 2 pieces of pepperoni on each breast.
Bake in pre-heated oven at 360 degrees F for 30-40 minutes until chicken internal temperature >165 deg F.
