Creamy Stuffed Chicken Zucchini Alfredo

Ingredients
  

  • 4 chicken breasts
  • 1 cup mozzarella cheese
  • 1 cup flour
  • 2 eggs
  • 2 cups breadcrumbs
  • 3 cups mashed potatoes
  • 1 zucchini
  • 2 stalks basil – chopped
  • 8 pieces turkey pepperoni
  • 1 cup heavy cream
  • 3 tbsp butter
  • 1 tsp salt
  • 4 small potatoes cut into quarters

Instructions
 

  • Slice each chicken breast to stuff 1 tbsp of mozzarella cheese into it.
  • Drip each piece into flour, then egg, then breadcrumbs, covering completely.
  • Fry with oil in pan for about 5 minutes, 2 minutes+ per side, until golden brown. Set aside.
  • Cut zucchini into cubes and boil for 5 minutes in water.
  • Dish out zucchini (drained) and put into a pan and use a potato masher to mash it.
  • Turn on the heat and add butter. Stir until melted. Then add heavy cream, salt and ½ cup cheese. Mix and simmer for 3 minutes.
  • In a baking dish, spread the mashed potatoes on the bottom. Apply some of the zucchini alfredo on top of it.
  • Lay the chicken in the dish and spread the alfredo sauce on top of them.
  • Put the small potatoes in between the chicken pieces.
  • Sprinkle the basil on top of the chicken. Put 2 pieces of pepperoni on each breast.
  • Bake in pre-heated oven at 360 degrees F for 30-40 minutes until chicken internal temperature >165 deg F.
