Spaghetti Pumpkin Alfredo

Ingredients
  

  • 10 oz of spaghetti angel hair
  • ½ stick butter 1/4 cup
  • 1 onion chopped
  • 1 tbsp minced garlic
  • 1 carrot chopped
  • 1 tbsp Italian seasoning
  • 1 lb minced turkey
  • 2 cups half & half
  • 1 cup parmesan cheese
  • 2 tbsp cream cheese
  • 1 can pumpkin 15 oz
  • 1 tsp salt
  • 1 tsp black pepper

Instructions
 

  • In a pot, bring 1.5 liters of water to boil and add 15g of salt and some oil. Put the spaghetti into the pot and boil for about 7 minutes until it is cooked. Strain the spaghetti out and set aside.
  • While step 1 is proceeding, heat oil and butter in wok and add onions on medium heat. Stir fry until onions are translucent.
  • Continue frying while adding garlic, carrots, and Italian seasoning (containing oregano, rosemary and thyme).
  • Add minced turkey. Mix and fry well.
  • Add half and half and stir to mix completely bringing it to boil.
  • Add parmesan cheese and mix completely
  • Add cream cheese and mix completely.
  • Add the pumpkin and mix completely.
  • Taste and add salt and pepper if necessary to taste.
  • Cover pot and turn heat to low. Heat for 3-5 minutes until sauce is thick and bubbling.
  • If sauce is not thick enough, add some corn starch water. Stir until it thickens.
