In a bowl, mix the minced turkey with 1 tbsp soy sauce, wine, sugar, salt, black pepper, fish sauce, 1 tbsp sesame oil and mayo
In another bowl, beat 4 eggs and mix with chicken broth.
Put the turkey in the bottom of the steaming dish.
Pour the egg mixture on top of the turkey.
Put the dish into a steamer and steam for 30 minutes. Check the temperature of the meat (>165 degrees F)
In a small bowl, mix 1 tbsp soy sauce and 1 tbsp sesame oil. Spoon the mixture over the top of the steamed egg.
Cut up spring onions and sprinkle on top.
