Turkey Meatloaf

Ingredients
  

  • 1 lb minced turkey
  • 1 cup breadcrumbs
  • ½ onion minced
  • 2 beaten eggs
  • 2 tbsp quick oats
  • 2 tsp corn starch
  • 2 tbsp butter
  • ¼ cup grated parmesan cheese
  • 1 tsp black pepper
  • 1 tsp salt
  • 1 tbsp minced garlic
  • 2 tbsp Worcestershire sauce
  • 1 cup minced mushrooms
  • 1 tsp thyme
  • ¼ cup minced carrots
  • ¼ cup parsley
  • ½ cup ketchup
  • ¼ cup honey
  • ¼ cup light soy sauce
  • 2 tbsp apple cider vinegar

Instructions
 

  • Blend onions, mushrooms, carrots, thyme, parsley in a blender
  • Melt butter in pan and fry garlic under medium heat. Add the blended vegetables and continue frying for a few minutes. Add Worcestershire sauce and mix. Turn off heat and let it cool. When cooled, add the beaten eggs and mix well.
  • In mixing bowl, mix breadcrumbs, quick oats, corn starch, salt, black pepper.
  • Add the mushroom mixture into the mixing bowl with the breadcrumbs. Add cheese and mix well.
  • Add minced turkey into the mixing bowl and hand mix until well incorporated.
  • Pour the mixture into a well-oiled loaf pan.
  • In a bowl, make the glaze by mixing ketchup, honey, soy sauce and vinegar. Brush half of the glaze on the meatloaf.
  • Bake in a pre-heated oven at 350 degrees F for 40 minutes.
  • Take the meatloaf out of the oven and increase the temperature to 400 degrees F.
  • Brush the remaining glaze on the meatloaf and bake in the oven at 400 degrees F for 15 minutes.
  • Check that the internal temperature of the meatloaf is >160 degrees F. Let it cool for 15 minutes before slicing
