Blend onions, mushrooms, carrots, thyme, parsley in a blender
Melt butter in pan and fry garlic under medium heat. Add the blended vegetables and continue frying for a few minutes. Add Worcestershire sauce and mix. Turn off heat and let it cool. When cooled, add the beaten eggs and mix well.
In mixing bowl, mix breadcrumbs, quick oats, corn starch, salt, black pepper.
Add the mushroom mixture into the mixing bowl with the breadcrumbs. Add cheese and mix well.
Add minced turkey into the mixing bowl and hand mix until well incorporated.
Pour the mixture into a well-oiled loaf pan.
In a bowl, make the glaze by mixing ketchup, honey, soy sauce and vinegar. Brush half of the glaze on the meatloaf.
Bake in a pre-heated oven at 350 degrees F for 40 minutes.
Take the meatloaf out of the oven and increase the temperature to 400 degrees F.
Brush the remaining glaze on the meatloaf and bake in the oven at 400 degrees F for 15 minutes.
Check that the internal temperature of the meatloaf is >160 degrees F. Let it cool for 15 minutes before slicing
