Completely defrost and pad drumsticks dry with paper towel.
Mix seasoning in a bowl (3): salt, Italian seasoning, black pepper, garlic powder, ginger powder, onion powder, paprika, red pepper flakes. Add ½ cup flour.
In a separate bowl (1), add ½ cup flour. In another bowl (2), beat 2 eggs.
Dip each drumstick in bowls (1), then (2) and then (3).
Spray with oil.
Pre-heat air fryer to 400 degrees F
Put drumsticks into air fryer and air fry for 10 minutes at 400 deg F
In a small pan, make the soy garlic sauce by mixing: vinegar, corn syrup, wine, sugar, light and dark soy sauce, minced garlic, sesame oil and ginger slices. Mix will and bring to boil. Let it simmer for 10-20 minutes until desired consistency is achieved.
Turn drumsticks over, spray with oil, and air fry for another 10 minutes.
Check internal temperature of drumsticks. If >165 deg F, they are done. Otherwise, air fry at 5-minute interval turning each time after checking temperature.
Coat each drumstick with the soy garlic sauce and place in serving dish.
