Marinate chicken in Ziploc with light soy sauce, dark mushroom sauce, vinegar, black pepper for 30 minutes or more.
Fry chicken in hot oil for 3 minutes per side. Remove and set aside.
Fry onion, garlic for 2 minutes
Add chicken back into the wok and add the left over marinate in the Ziploc.
Add ½ cup water and bring to boil.
Add peppercorn, carrots and sugar, mix and let it simmer for 15 minutes covered.
Turn chicken pieces over and simmer for another 5 minutes. Check for taste and adjust if necessary.
