Chicken Adobo

Ingredients
  

  • 6 chicken thighs
  • ¼ cup light soy sauce
  • ¼ cup dark mushroom sauce
  • ¼ cup black vinegar
  • 3 bay leaves
  • 1 tsp black pepper
  • 1 tbsp peppercorn
  • ½ onion chopped
  • 1 tbsp minced garlic
  • 1 tbsp sugar
  • ½ cup carrot diced

Instructions
 

  • Marinate chicken in Ziploc with light soy sauce, dark mushroom sauce, vinegar, black pepper for 30 minutes or more.
  • Fry chicken in hot oil for 3 minutes per side. Remove and set aside.
  • Fry onion, garlic for 2 minutes
  • Add chicken back into the wok and add the left over marinate in the Ziploc.
  • Add ½ cup water and bring to boil.
  • Add peppercorn, carrots and sugar, mix and let it simmer for 15 minutes covered.
  • Turn chicken pieces over and simmer for another 5 minutes. Check for taste and adjust if necessary.
