Boil the pork, skin side down, fully immersed, in a pot for 10 minutes. Take out the pork, rinse with cold water and let it rest for 15 minutes.
Cut crisscross slits on the underside of the pork up to half way down, without cutting the skin.
In a small bowl, mix 1 tsp salt, five spice, onion powder, garlic powder, white pepper.
Season the underside, the slits, and all four sides of the pork (except the skin) with the salt mixture.
Turn the pork over and poke holes into the skin with a fork without penetrating through the skin. Pad the skin dry with a paper towel.
Cover the pork on all sides except the skin with an aluminum foil shield.
In a small bowl, mix vinegar, 1 tsp salt and baking soda. Brush the skin with this mixture.
Bake the pork in the air fryer at 250 degrees F for 15-30 minutes. Pad the skin dry after that.
Pre-heat air fryer to 400 degrees (5 minutes)
Poke holes again on the skin. Then rub 1 tsp salt over it and spray with oil.
Air fry pork in air fryer at 400 degrees F for 15 minutes. Air fry for another 10 minutes and check the temperature. Repeat, if necessary, until the internal temperature of the pork > 170 degrees F.
Air broil the pork at 450 degrees F for 5 minutes. Take out the pork and let it cool for 15 minutes before slicing
