Crispy Belly Pork

Ingredients
  

  • 1 lb belly pork
  • 3 tsp salt
  • 1 tsp five spice powder
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp white pepper
  • 1 tsp white rice vinegar
  • 1 tsp baking soda

Instructions
 

  • Boil the pork, skin side down, fully immersed, in a pot for 10 minutes. Take out the pork, rinse with cold water and let it rest for 15 minutes.
  • Cut crisscross slits on the underside of the pork up to half way down, without cutting the skin.
  • In a small bowl, mix 1 tsp salt, five spice, onion powder, garlic powder, white pepper.
  • Season the underside, the slits, and all four sides of the pork (except the skin) with the salt mixture.
  • Turn the pork over and poke holes into the skin with a fork without penetrating through the skin. Pad the skin dry with a paper towel.
  • Cover the pork on all sides except the skin with an aluminum foil shield.
  • In a small bowl, mix vinegar, 1 tsp salt and baking soda. Brush the skin with this mixture.
  • Bake the pork in the air fryer at 250 degrees F for 15-30 minutes. Pad the skin dry after that.
  • Pre-heat air fryer to 400 degrees (5 minutes)
  • Poke holes again on the skin. Then rub 1 tsp salt over it and spray with oil.
  • Air fry pork in air fryer at 400 degrees F for 15 minutes. Air fry for another 10 minutes and check the temperature. Repeat, if necessary, until the internal temperature of the pork > 170 degrees F.
  • Air broil the pork at 450 degrees F for 5 minutes. Take out the pork and let it cool for 15 minutes before slicing
