Mango Loaf Cake

Ingredients
  

  • ½ cup mango puree
  • 1/3 cup butter
  • 1/3 cup powdered sugar
  • ½ cup flour
  • 1 tbsp corn flour
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 egg

Instructions
 

  • In a mixing bowl, beat butter for about 1 minute
  • Add powdered sugar and beat for 2-3 minutes
  • Add egg and beat for 1 minute
  • Add mango puree and blend completely
  • In another bowl, mix by hand the dry ingredients: flour, corn flour, baking soda, baking powder and salt.
  • Add the flour mixture into the puree mixture slowly by batches, folding to incorporate completely each time.
  • Bake in pre-heated oven at 360 degrees F for 30 minutes.
  • Take out of the oven and let it cool. Apply frosting on top if desired.
