Mango Loaf Cake
Ingredients
- ½ cup mango puree
- 1/3 cup butter
- 1/3 cup powdered sugar
- ½ cup flour
- 1 tbsp corn flour
- ½ tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- 1 egg
Instructions
- In a mixing bowl, beat butter for about 1 minute
- Add powdered sugar and beat for 2-3 minutes
- Add egg and beat for 1 minute
- Add mango puree and blend completely
- In another bowl, mix by hand the dry ingredients: flour, corn flour, baking soda, baking powder and salt.
- Add the flour mixture into the puree mixture slowly by batches, folding to incorporate completely each time.
- Bake in pre-heated oven at 360 degrees F for 30 minutes.
- Take out of the oven and let it cool. Apply frosting on top if desired.
