Marinate cut chicken pieces for 30 minutes with ginger, minced garlic, sugar, 1 tsp salt, ½ tsp white pepper, ½ tsp five spice, wine, soy sauce, oil. After 30 minutes, add an egg into the chicken and mix thoroughly.
Put ¼ cup of sweet potato starch into a bowl. Coat each piece of chicken with it and set aside. Repeat until all chicken have been coated. Use additional sweet potato starch as necessary.
Pre-heat air fryer to 400 degrees F for 5 minutes. Spray both sides of the coated chicken with oil. Air fry the chicken in batches for 10 minutes at 400 degrees F, shaking half way. Place air fried chicken in the serving dish.
Create a spice mix with ½ tsp salt, ½ tsp five spice and ½ tsp white pepper. Before serving, sprinkle the spice mix over the chicken.
