Stuffed Pesto Bacon Chicken

Ingredients
  

  • 4-5 chicken breasts
  • ½ cup pesto
  • 1 pack turkey bacon
  • 8 oz shredded cheese
  • 1 cup cherry tomatoes
  • 1 tbsp basil
  • 1 tbsp paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp black pepper
  • 1 tbsp garlic salt
  • ½ cup half and half
  • 1 tbsp butter

Instructions
 

  • Slice each chicken breast ¾ of the way to enable the stuffing.
  • Marinate the chicken with paprika, onion powder, garlic powder, garlic salt – both sides inside and out
  • Stuff each chicken with pesto, bacon, and measure of shredded cheese. Fold the chicken and hold it in place with 2 toothpicks.
  • Pre-heat oven to 425 degrees F
  • Heat a large oven safe pan and add oil and 1 tbsp butter.
  • When pan is very hot, fry each piece of chicken for 4 minutes per side.
  • When all the chicken is fried, turn off the heat with the chicken in the pan (put it back in if you have fried in batches)
  • Put a piece of bacon on top of each chicken and sprinkle shredded cheese on top.
  • Distribute the cherry tomatoes in between the chicken in the pan. Add half and half to provide additional liquid in the pan.
  • Bake the chicken in the oven for about 30 minutes until the internal temperature is >165 deg F.
  • Take out and let it cool for 5 minutes. Remove the toothpicks! Serve
