Marinate chicken for 30 minutes with soy sauce, sweet soy sauce, cooking wine, sugar, sesame oil, 1.5 tsp cornstarch, 1 tbsp cooking oil
With oil in the pan, fry the chicken until it is cooked, about 10 minutes. Set aside.
With oil in the pan, fry the minced garlic and black beans until fragrant. Add ginger and onions and continue frying for 1 minute.
Add bell peppers and chicken and fry for 1 minute,
Add white wine and cover for 1 minute. Add spring onions and mix.
Make cornstarch slurry with 1.5 tsp of cornstarch and water and add to pan. Stir until well mixed/thickens.
