Pressure Cooked Pork Roast

Ingredients
  

  • 3 lb pork roast
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 2 tsp onion powder
  • 2 tsp thyme
  • 1 tsp cinnamon
  • 1 tsp salt
  • 2 tsp five spice powder
  • 2 tbsp minced garlic
  • 1 onion cut
  • 1 cup red wine
  • 1 cup broth
  • 1/4 cup dark soy sauce
  • 2 stalks celery cut
  • 15 mini potatoes halved
  • 1/4 cup brown sugar

Instructions
 

  • Season pork on all sides with the dry rub of pepper, garlic powder, onion powder, thyme, cinnamon, brown sugar and salt.
  • With oil in pressure cooker, sauté the garlic and onions until fragrant. Set aside.
  • With oil remaining in the pressure cooker, sear the pork for about 2 minutes per side. Set aside.
  • Add red wine to pressure cooker to deglaze the pan. Add broth and dark soy sauce and bring to boil. Add the fried garlic and onion.
  • Put the pork into the pressure cooker and pressure cook for 60 minutes.
  • Bleed the pressure and check the temperature of the pork. Add the potatoes and celery. Pressure cook for another 15 minutes.
  • Bleed the pressure and check the temperature of the Pork. If it is > 165 degrees F, it is done. Otherwise, pressure cook for 15 minutes until pork is done.
