Tuna Omelet

Ingredients
  

  • 2 cans tuna (about 20 oz)
  • 6 large eggs
  • 1/4 cup mayonnaise
  • 1/4 cup tomato ketchup
  • 1/2 onion chopped
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp minced garlic

Instructions
 

  • Drain tuna and add to mixing bowl. Break up the tuna and add mayo and ketchup. Mix well until a constant consistency.
  • In wok with oil, fry onions for 2 minutes. Add garlic and fry for another minute.
  • Add the tuna and fry for about 5 minutes. Add salt and pepper and adjust according to taste. Set aside to cool.
  • Beat eggs in mixing bowl and add the tuna. Mix well.
  • Heat about 1-2 cups of oil in a wok to at least 300 degrees F. Bring heat down to medium.
  • Scoop the tuna and egg mixture and fry in the wok. Do not over crowd. Each batch may take about 2 or 3 scoops.
  • Fry for 2-3 minutes and then turn them over and fry for another 2-3 minutes until browned. Take them out and put on serving dish with paper towels to absorb the oil. Repeat until mixture is used up.
