Drain tuna and add to mixing bowl. Break up the tuna and add mayo and ketchup. Mix well until a constant consistency.
In wok with oil, fry onions for 2 minutes. Add garlic and fry for another minute.
Add the tuna and fry for about 5 minutes. Add salt and pepper and adjust according to taste. Set aside to cool.
Beat eggs in mixing bowl and add the tuna. Mix well.
Heat about 1-2 cups of oil in a wok to at least 300 degrees F. Bring heat down to medium.
Scoop the tuna and egg mixture and fry in the wok. Do not over crowd. Each batch may take about 2 or 3 scoops.
Fry for 2-3 minutes and then turn them over and fry for another 2-3 minutes until browned. Take them out and put on serving dish with paper towels to absorb the oil. Repeat until mixture is used up.
