Fry corn beef in wok with oil for about 3 minutes. Remove and set aside.
Add oil to wok and fry onions for 2 minutes, add minced garlic and fry for another minute.
Add bell peppers – mix and fry
Add sweet potatoes – mix and fry
Add broth and bring to boil. Let it simmer covered for about 4-5 minutes to soften the sweet potatoes
Scoop away the excess liquid from the wok. Then add soy sauce and sweet soy sauce and mix well.
Add the cooked corn beef and mix
Add shredded cheese and mix well.
Beat eggs in a bowl and add black pepper. Add the beaten eggs into the wok and let it cover completely. Turn off the heat after a few minutes.
Bake in a pre-heated oven at 350 degrees F for 15 minutes.
