Before the chicken is completely defrosted, chop it up with a cleaver. This prevents the chicken pieces from disintegrating. Arrange chopped chicken in a baking dish.
In a sauce pan over low heat, mix the sauce: ketchup, soy sauce, sesame oil, hoisin sauce, apple cider vinegar, honey. Mix thoroughly and adjust taste with 1-2 tbsp sugar as necessary. Bring to boil and remove from heat.
Pour sauce all over the chicken in the tray and refrigerate overnight.
Bake chicken in pre-heated oven at 400 degrees F for 30-45 minutes.
Check chicken internal temperature. If <165 degrees F, continue baking over 15-minute intervals until temperature > 165 degrees F. Remove from oven and let it cool.
