Ang Kak (Fermented Red Rice) Chicken

Ingredients
  

  • 1 lb chicken cut into cubes
  • 1 tbsp ang kak (fermented red rice) finely ground
  • 4 tbsp ginger chopped
  • 1 tbsp minced garlic
  • 1 tsp salt
  • 2 tbsp sesame oil
  • 1/4 cup red wine
  • 1 cup chicken broth
  • 1-2 tbsp sugar

Instructions
 

  • Marinade cut chicken with salt and sesame oil for at least 30 minutes
  • In wok with oil, stir fry the ginger for 2 minutes. Add minced garlic and fry for another minute.
  • Add the ang kak and fry quickly to mix
  • Add the chicken and fry for 3 minutes mixing well until cooked.
  • Add broth and let it simmer for 10 minutes over low heat
  • Add red wine and let it simmer for another 5 minutes. Add sugar according to taste.
