Ang Kak (Fermented Red Rice) Chicken
Ingredients
- 1 lb chicken cut into cubes
- 1 tbsp ang kak (fermented red rice) finely ground
- 4 tbsp ginger chopped
- 1 tbsp minced garlic
- 1 tsp salt
- 2 tbsp sesame oil
- 1/4 cup red wine
- 1 cup chicken broth
- 1-2 tbsp sugar
Instructions
- Marinade cut chicken with salt and sesame oil for at least 30 minutes
- In wok with oil, stir fry the ginger for 2 minutes. Add minced garlic and fry for another minute.
- Add the ang kak and fry quickly to mix
- Add the chicken and fry for 3 minutes mixing well until cooked.
- Add broth and let it simmer for 10 minutes over low heat
- Add red wine and let it simmer for another 5 minutes. Add sugar according to taste.
