Trim the beef into a rectangle shape by cutting away the uneven sides and fat.
Slice the beef across the grain into equal thin slices
In a Ziploc bag, add soy sauce, brown sugar, vinegar, ginger powder, garlic powder, sesame oil, black pepper, red pepper flakes, liquid smoke
Add the beef into the bag, seal and mix well. Let the beef marinate in the refrigerator for 2-4 hours or overnight for more flavor.
Remove the beef from the bag and pad with paper towel to remove excess liquid. Lay the beef pieces in the air fryer tray.
Set the air fryer to dehydrate mode at 165 degrees F (160-170) and dehydrate for 2 hours.
