Pound the pork chop pieces flat with a meat mallet and cut into about 1-2 inch squares.
Marinate pork with 2 tbsp light soy sauce, sesame oil, 1 tsp black pepper, salt for at least 30 minutes.
In wok with oil, fry the potatoes for about 8 minutes until browned. Set aside.
In a bowl, make the sauce with 2 tbsp light soy sauce, dark soy sauce, oyster sauce, brown sugar, 1 tsp black pepper and corn starch.
In wok with oil, fry onions for about 1 minute and add the minced garlic and fry for another 30 seconds. Add the pork, mix well and fry for about 5 minutes.
Add sauce and 1 cup of water and bring to boil.
Add potatoes and simmer over low heat until pork is tender (30 minutes or more)
