Chocolate Birthday Cake

Ingredients
  

  • 4 oz cream cheese melted
  • 1 stick unsalted butter melted
  • 1 1/4 cup sugar
  • 1 tbsp vanilla
  • 2 large eggs beaten
  • 2 cups flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1 1/4 cup semi-sweet chocolate chips
  • 1 1/2 cup heavy whipping cream
  • 2 tbsp cocoa powder

Instructions
 

  • In a mixing bowl, mix 1 cup sugar with melted cream cheese by hand. Add melted butter and mix well. Add vanilla and mix. Add eggs and mix well to get uniform mixture.
  • Pre-heat oven to 375 degrees F
  • In another bowl, mix the dry ingredients – flour, baking powder, baking soda and salt.
  • Add the mixed dry ingredients in portions into the mixing bowl with the wet ingredients, mixing well each time.
  • Add milk and mix well
  • In a small bowl, melt 1/4 cup of chocolate chips with a little milk in the microwave.
  • Add the chocolate syrup into the mixing bowl and mix well.
  • Add 1 cup of chocolate chips into the mixing bowl and mix well.
  • Spray oil inside an 8-inch spring baking dish.
  • Pour the entire mixture into the baking dish and spread evenly.
  • Bake in the oven at 375 deg F for 1 hour.
  • Take the cake out of the oven and let it cool to room temperature.
  • In a clean mixing bowl, make the frosting by mixing heavy whipping cream with 4 tbsp (1/4 cup) of sugar. Use an electric hand mixer at high speed. Sieve and add 2 tbsp of cocoa powder into the mixture. Continue mixing at high speed until the mixture thickens (about 5 minutes)
  • Put the cake on a serving tray and remove the spring dish. Apply the frosting to the top and sides of the cake.
