Baked Pork Loin with Peaches and Potatoes

Ingredients
  

  • 2 lb Pork Loin
  • 2 tsp black pepper
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 2 tsp paprika
  • 1 tsp salt
  • 1 large potato peeled
  • 2 tbsp cooking oil
  • 2 tsp dry whole thyme
  • 1 can peach halves

Instructions
 

  • Slice across the pork loin but not completely cut.
  • In a small bowl, mix dry rub containing black pepper, onion powder, garlic powder, paprika, salt.
  • Rub all over the partially cut pork loin and let it marinate for at least 1 hour.
  • Cut the peeled potato into relatively thin slices. Let them boil in a pot for about 3 minutes. Drain and set aside and let it cool.
  • Pre-heat oven to 350 degrees F
  • When the potatoes are cool, marinate them with oil and thyme.
  • With the pork in a baking dish, insert the potato slices into the cuts. Put the extra slices around the pork.
  • Open the can of peaches and pour the syrup around the pork.
  • Cut the peach halves into quarters and arrange them on the pork and around it.
  • Pour a little more oil over the pork.
  • Cover with aluminum foil and bake in oven for 30 minutes
  • After 30 minutes, remove the foil and continue baking for another 45 minutes.
  • Remove pork from the oven and check the temperature of the pork is >145 degrees F
