Slice across the pork loin but not completely cut.
In a small bowl, mix dry rub containing black pepper, onion powder, garlic powder, paprika, salt.
Rub all over the partially cut pork loin and let it marinate for at least 1 hour.
Cut the peeled potato into relatively thin slices. Let them boil in a pot for about 3 minutes. Drain and set aside and let it cool.
Pre-heat oven to 350 degrees F
When the potatoes are cool, marinate them with oil and thyme.
With the pork in a baking dish, insert the potato slices into the cuts. Put the extra slices around the pork.
Open the can of peaches and pour the syrup around the pork.
Cut the peach halves into quarters and arrange them on the pork and around it.
Pour a little more oil over the pork.
Cover with aluminum foil and bake in oven for 30 minutes
After 30 minutes, remove the foil and continue baking for another 45 minutes.
Remove pork from the oven and check the temperature of the pork is >145 degrees F
