Completely defrost pork loin and pat dry. Use a fork and poke holes all around the pork.
In a small bowl, mix the dry ingredients: salt, black pepper, garlic powder, onion powder, Italian seasoning
Rub 2 tbsp sesame oil all over the pork. Rub the dry ingredients thoroughly over the pork. Let it marinate for at least 1 hour.
Pre-heat oven to 400 degrees F
In the baking dish, lay the vegetable uniformly at the bottom. Pour 2 tbsp sesame oil and soy sauce over it. Add chicken broth into the baking dish.
With oil in a pan over medium-high heat, sear the pork on every side for about 1-1.5 minutes per side.
Lay the pork loin on top of the vegetables in the baking dish. Bake pork in the pre-heated oven for 45-60 minutes, depending on the thickness of the pork loin.
Take pork out of the oven and check that the internal temperature of the pork is greater than150 degrees F. Cook for additional 10 minutes if necessary until temperature is achieved.
Let pork loin rest for 15 minutes before cutting.
