Creamy Chicken Corn Soup
Ingredients
- 4 chicken thighs cut up
- 1/2 onion chopped
- 1 tbsp minced garlic
- 4 slices bacon
- 5 stalks celery cut up
- 1 tsp dried parsley
- 1 tsp Italian seasoning
- 2 tbsp butter
- 2 tbsp soy sauce
- 1 tsp black pepper
- 1 1/2 cups chicken broth
- 1 can sweet corn
- 1/2 cup half & half
- 1 cup milk
- 2 tbsp cornstarch to make slurry
Instructions
- With butter in a pot, fry onions and garlic for 2 minutes
- Add chicken and fry for 4 minutes.
- Add bacon, celery, parsley, Italian seasoning, black pepper and soy sauce. Sauté for 3 minutes.
- Add chicken broth and 1/2 cup water. Bring it to boil. Simmer covered over low heat for 15 minutes.
- Add corn, milk and half & half. Stir to mix well and bring to boil.
- Add cornstarch slurry, stir and boil/simmer for 5 minutes, stirring occasionally.
