Satay Chicken

Ingredients
  

  • 6 chicken thighs
  • 2 cup coconut milk
  • 3 tbsp peanut butter
  • 2 tbsp sugar
  • 1 can satay sauce
  • 4 tbsp sweet soy sauce
  • 2 tbsp fish sauce
  • 2 tsp salt
  • ½ tbsp tamarind
  • 1 tbsp lime juice

Instructions
 

  • Marinate chicken thighs for 30 minutes with 4 tbsp coconut milk, 1 tbsp peanut butter, 1 tbsp sugar, 2 tbsp satay sauce, 2 tbsp sweet soy sauce, 1 tbsp fish sauce, 1 tsp salt.
  • Pre-heat oven to 400 degrees F
  • In a hot oven-safe pan with oil, sear the chicken for 5 minutes per side.
  • Put the pan in the oven at 400 degrees F for 30 minutes to completely cook chicken.
  • Prepare sauce in a small pot with remainder of coconut milk, 2 tbsp peanut butter, 1 tbsp fish sauce, 2 tbsp sweet soy sauce, 1 tbsp sugar, remainder of satay sauce, ½ tbsp tamarind, 1 tsp salt.
  • Bring sauce to boil and remove from heat. Add 1 tbsp lime juice.
  • When chicken is cooked, remove the chicken pieces from the pan to a serving dish. Pour the sauce over the chicken.
