Pineapple Pecan Bread
Ingredients
- 3 eggs
- ½ cup milk
- 1 tsp vanilla
- 8 oz crushed pineapple
- ¾ cup sugar
- 2 ½ cup flour
- ½ tsp salt
- 2 tsp baking powder
- ¼ tsp baking soda
- 6 tbsp butter melted
- 1 cup coconut flakes
- ¾ cup pecan nuts chopped
- 1 tsp cinnamon powder
Instructions
- In mixing bowl, mix eggs, milk, vanilla, sugar, and pineapple.
- In a second bowl, mix the dry ingredients: flour, salt, baking powder, baking soda.
- Mix the dry mixture into the egg mixture slowly stirring and mixing well.
- Add coconut and nuts and mix well.
- Pour mixture into 5×9 in baking dish.
- Sprinkle nuts over the top of the dish.
- Then sprinkle cinnamon over the top as well.
- Bake in pre-heated oven at 350 degrees F for 60 minutes.
