Coffee Sponge Cake
Ingredients
- ¼ cup warm milk
- 1 tbsp instant coffee
- 3 eggs
- ½ cup sugar
- ½ cup flour
- 1 tsp salt
- 1 tsp vanilla
- ¼ cup vegetable oil
Instructions
- In small bowl, mix the coffee into the warm milk.
- In mixing bowl, beat the eggs and sugar using a hand mixer until fluffy – about 8-10 minutes.
- Add salt, vanilla and oil
- Slowly add the flour mixing it by hand.
- Stir the coffee milk mixture and add it to the mixing bowl.
- Gently fold by hand until completely incorporated
- Prepare an oiled baking pan with parchment paper at the bottom.
- Slowly add the mixture, letting it flow to fill the pan.
- Bake in a pre-heated oven at 350 degrees F for 30 minutes
