Coffee Sponge Cake

Ingredients
  

  • ¼ cup warm milk
  • 1 tbsp instant coffee
  • 3 eggs
  • ½ cup sugar
  • ½ cup flour
  • 1 tsp salt
  • 1 tsp vanilla
  • ¼ cup vegetable oil

Instructions
 

  • In small bowl, mix the coffee into the warm milk.
  • In mixing bowl, beat the eggs and sugar using a hand mixer until fluffy – about 8-10 minutes.
  • Add salt, vanilla and oil
  • Slowly add the flour mixing it by hand.
  • Stir the coffee milk mixture and add it to the mixing bowl.
  • Gently fold by hand until completely incorporated
  • Prepare an oiled baking pan with parchment paper at the bottom.
  • Slowly add the mixture, letting it flow to fill the pan.
  • Bake in a pre-heated oven at 350 degrees F for 30 minutes
