Pumpkin Cobbler
Ingredients
- 1 15 oz can of pumpkin puree
- 1 cup sugar
- ½ cup half and half
- 1 tsp vanilla
- ¼ cup butter melted
- 1 ½ cups flour
- 2 tsp baking powder
- 1 tsp salt
- 2 tsp pumpkin spice
- ½ cup brown sugar
- ¾ cup pecan pieces
- 1 cup boiling water
Instructions
- Mix: pumpkin puree, ½ cup sugar, half and half, vanilla, butter, baking powder, salt, pumpkin spice. Add flour slowly, ¼ cup at a time, mixing each time. Pour into baking dish.
- Mix topping: brown sugar, ½ cup sugar, pecan. Spread topping over batter in dish. Pour boiling water over it.
- Bake in pre-heated oven at 350 degrees F for 45-60 minutes

I actually used 1.5 cups of boiling water. The cobbler looked rather watery after 60 minutes in the oven. I reduced the recipe above to 1 cup water. However, after cooling and the next day, it was perfect. I believe 1 cup will still be OK.
A piece of heated cobbler goes very well with vanilla ice cream!
