Sweet Potato Casserole
Ingredients
- 4 large sweet potatoes cut
- 3 eggs
- ½ cup sugar
- 1 tsp vanilla
- 5 tbsp butter melted
- 1 cup dried cranberries
- 2/3 cup brown sugar
- 1 cup pecan pieces
- 1/3 cup flour
- 3 tbsp cold butter cubes.
Instructions
- Boil sweet potatoes in a pot for 15 minutes until fork tender. Drain and mash the potatoes with a hand mixer. Add eggs, sugar, vanilla and melted butter. Add cranberries and blend. Put into the baking dish.
- Make the topping: brown sugar, pecan, flour and cold butter cubes. Mix by hand and spread on top of the potatoes.
- Bake in pre-heated oven at 350 degrees F for 45 minutes
