Banana Cup Cakes
Ingredients
- 1 cup sugar
- 1 cup flour
- 1/2 tsp salt
- 1 tsp baking soda
- 2 large eggs
- 3/4 cup melted butter (1 1/2 sticks)
- 2 large overripe bananas
- 1 tsp orange essence (optional)
Instructions
- In a mixing bowl, mix the dry ingredients: sugar, flour, salt, baking soda.
- Add eggs and butter. Fold in and mix with hand mixer until smooth
- Mash bananas with a fork and add to the mixture. Fold in and mix with hand mixer until smooth. Add orange essence if desired.
- Place cupcake cups in a cupcake baking tray. Pre-heat oven to 360 degrees F.
- Distribute the batter over all the cupcake cups.
- Bake in oven for 20 minutes.
