In a mixing bowl, mix the dry ingredients: sugar, flour, salt, baking soda.
Add eggs and butter. Fold in and mix with hand mixer until smooth
Mash bananas with a fork and add to the mixture. Fold in and mix with hand mixer until smooth. Add orange essence if desired.
Place cupcake cups in a cupcake baking tray. Pre-heat oven to 360 degrees F.
Distribute the batter over all the cupcake cups.
Bake in oven for 20 minutes.
