Pad dry the pork chops and season with the dry rub for at least 30 minutes.
In wok with oil, fry the pork chops in batches, about 3-4 minutes per side. Set aside on a baking dish.
Pre-heat oven to 400 degrees F
In a bowl, mix the sauce: honey mustard dressing, mayo, ketchup and half & half.
Place the mini bell peppers on top of the pork chops in the baking dish.
Apply the sauce uniformly over the pork chops.
Bake in 400 deg F oven for 25 minutes
