Batter Chicken Breasts with Wine

Ingredients
  

  • 3 chicken breasts sliced
  • 2 eggs
  • ½ cup grated parmesan cheese
  • 1 cup breadcrumbs
  • ½ cup flour
  • ½ cup white wine
  • ½ cup half and half
  • 1 tbsp minced garlic
  • 1 tbsp Italian seasoning
  • 2 tsp lemon pepper seasoning
  • 4 tbsp butter
  • 2 tbsp lemon juice
  • ¼ cup mushrooms

Instructions
 

  • Slice the chicken breasts parallel to the cutting surface to make it thinner.
  • In Bowl #1 put flour, Bowl # 2 beat eggs and add lemon pepper seasoning; Bowl #3 put breadcrumbs and parmesan cheese. Coat the chicken in bowls 1, 2, and 3 to cover completely.
  • In pan with oil and 2 tbsp butter, fry the chicken about 3-4 minutes per side. Set aside.
  • In the same pan, add oil, if necessary, add 2 tbsp butter and fry garlic. Add mushrooms. Then add wine, half & half and Italian seasoning. Bring to boil.
  • Add chicken to cook in the sauce. Baste the chicken with it. Cook until the internal temperature of the chicken is >165 degrees F
