Pre-heat oven to 375 degrees F
In a large bowl, mix eggs, milk, salt and pepper.
Drain the cans of chicken and roast beef, then break the meat into small pieces. Sprinkle the chicken into one pie crust and roast beef into the other one.
Sprinkle ½ cup of mushrooms, ½ cup spinach and ½ cup parsley and ½ cup shredded cheese into each pie crust.
Pour egg mixture over it (do not overfill). About 1 ½ cups per pie crust
Sprinkle remaining cheese on top of egg mixture.
Bake for 35-40 minutes until center is completely set.
Let cool before slicing and serving
