In a bowl, mix the seasoning: garlic powder, parsley, black pepper and salt. Season the chicken pieces for 30 minutes.
In a wok, add oil and butter. Fry the chicken for about 5 minutes until cooked. Remove and set aside.
Add more oil to the wok and fry garlic, shallots, red pepper and celery for several minutes.
Add the chicken to the wok and fry for 2 minutes mixing well.
Add fish sauce, light soy sauce, sugar and lime juice. Mix well and let it simmer over low heat for about 5 minutes.
