In wok with sesame oil, stir fry ginger until it starts to turn brown. Add onion and garlic and continue frying.
Add chicken mixing well and frying until chicken turns white (cooked).
Add soy sauce, sweet soy sauce, oyster sauce, fish sauce, and lime juice. Continue frying for about 5 minutes.
Add celery and simmer for 2 minutes.
Add wine and simmer for another minute.
Mix corn starch with water and add to wok. Stir until sauce thickens. Add water as necessary to adjust consistency of gravy.
